So, I had some beets that needed to be used. I thought: borscht (Russian beet stew). The recipe that I had also called for cabbage, potatoes, and onion, which I happened to have on hand.
Did I metion it was RED cabbage, RED onion, and PURPLE potatoes?
All those rich reds and purples combined to make a particularly beautiful red stew.
Gorgeous. And it is moreover delicious. However, even though I froze half of it, I've still been eating borscht for DAYS! Daaaaaaaaaaaaaaaaaaaaaaaaaaaaaaaaays! So many days of red Russian beet stew that I'm not just seeing red, I'm literally pooping red.
HELP!
